Cleaning Tools And Jars

How should I clean my tools and jars when preparing to ferment.

There is often too much thought put into this. Simply put, when preparing the kitchen for vegetable fermentation, all you really have to do is wash your tools and jars with soap and warm water like when preparing any other dish.  This should thoroughly clean and prepare your fermentation gear and equipment. 

Many people think that you need to use some sort of special cleaning supplies for cleaning any fermentation equipment, but this is just not true.

There is no need to buy a special soap, brand name cleaner or to heat up your jars in the oven prior to loading them with your favorite veggies. Give them a good washing and move to the next steps

Keep Vegetables Submerged

What is the most important thing to remember with vegetable fermentation?

One of the most important things to remember is to keep your vegetables mostly submerged under the brine. An occasional floater or vegetable piece at the surface is fine but the majority of your veggies need to be submerged. This will allow the vegetables to ferment properly and prevent decay and mold growth. This can be done multiple ways, the most common way is to place some sort of weight on the vegetables to hold them under the brine.  Some kits use a glass puck for this, however we have come up with a better method. Instead of the glass puck, we use a Stainless Steel Cup.  Not only does this keep the vegetables submerged under the salt water brine, it also leaves a space for any expanding liquid to pour into.

What vegetables make the best ferment?

It’s always best practice to keep your vegetables fresh. If they are not fresh looking, it would be best not to ferment them. Keep in mind that fermenting isn’t a way of salvaging expired food. It’s a way of food preservation and enhancement, but it will not make bad food good to eat again. Also make sure to keep in mind that when fermenting cucumbers, they need to be even more fresh than most other vegetables. I wouldn’t ferment cucumbers that are over 48 hours old off the vine. This causes mold to grow on them during ferment as well as a layer of slime that is most definitely unappealing. Most vegetables that you buy in the your local grocer will be fine to ferment.

Home grown and local grown produce seems to give the best results but we produce very good ferments with cabbages, carrots, onions, garlics, peppers and others grown far away and transported into our local organic grocer during the winter months.
