    The fermentation process takes around 3 to 4 days.  However, you can always add more days to your ferment if you like your food to be extra sour!

    After the fermentation process, your vegetables are infused with vitamins and minerals that are extremely healthy for you!  Additionally, several peptides and enzymes are synthesized such as proteinase and peptidase.  Fermented foods provide many health benefits such as anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, anti-diabetic and anti-atherosclerotic activity.

    During salt water fermentation, lactic-acid bacteria works to synthesize vitamins, minerals, peptides, enzymes, as well as remove non-nutrients.  All of which are extremely beneficial to your overall health, especially for your gut!

    Use one tablespoon of Celtic Sea Salt or other premium brand per every two cups of water.
