What is Lacto-Fermentation?
First off, the word “lacto” in this case doesn’t refer to milk. It’s referring to “lactic acid” that is created when you throw in Vegetables + Water + Salt and add in 72 hours worth of time. Lacto-Fermentation is the process of fermenting vegetables in a salt water brine solution in order to enhance the health benefits of said vegetables. Basically, you’re creating as probiotic powerhouse. Sauerkraut, Pickles, and Kimchi are all foods made using Lacto Fermentation.
How does Fermentation work?
During Fermentation, the salt water brine allows Lactic Acid Bacteria to synthesize vitamins and minerals in the vegetables. This helpful and naturally appearing bacteria also produces peptides and enzymes such as proteinase and peptidase which are biologically active and are extremely helpful when it comes to improving your health. Lactic Acid Bacteria also works to remove non nutrients during the fermentation process.

For starters, fermented vegetables are rich in live Lactic Acid Bacteria that actively improve overall gut health, but again, a healthy stomach is just the beginning. Fermented foods have the ability to improve anti-oxidant, anti-microbial, anti-fungal, anti-inflammatory, anti-diabetic and anti-atherosclerotic activity. These foods also contain large amounts of probiotics, much more probiotics in fact than many of the pill bottles contain that are sold in stores.

This Is How Easy Fermentation Can Be
Lets start with a basic but FLAVORFUL Sauerkraut. We have cabbage, carots, onion and garlic. We are going to put these 4 ingredients in a large bowl and add two even tablespoons of a natural salt like sea salt. Toss. Let sit for 10 minutes and toss again. Pack into a 1 quart jar almost to the top and pack it down. Top it off with a bit of filtered water and make sure there aren’t any air pockets in your jar. Insert the Perfect Pickler® brine catch cup and the water level will reach almost to the top. Seal it off with the Perfect Pickler® lid and bubbler air lock and let it sit for 3 days on your kitchen counter.
THAT’S IT! Open it in 3 days and place in the fridge. Eat a little everyday for gut healthy probiotics. Be sure to visit our recipe pages for more info.
